Chocolate Mousse
Ingredients Recipe
Whipped egg yolk mixture
4 Egg Yolks
3/4 cup Caster sugar
1/4 cup High quality bourbon
6 ozs Semi-sweet chocolate
6 ozs Unsalted butter
Whipped egg white mixture
4 Egg Whites
1 pinch Salt
1 tbsp Caster sugar
Steps
- Beat the 4 Egg Yolks and 3/4 cup Caster sugar together until the mixture is thick, pale yellow and forms a ribbon.
- Beat in the 1/4 cup High quality bourbon and set the bowl over gently simmering water. Beat for another 3 to 4 minutes until the mixture has small bubbles and is too hot for your finger.
- Then beat over cold water for another 3 to 4 minutes until it is cool again and forms the ribbon.
- Cut the 6 ozs Semi-sweet chocolate into small pieces and put in a microwave safe bowl with the 6 ozs Unsalted butter. Melt on a medium heat, stirring every minute until the chocolate and butter mixture is fully combined and smooth. Let cool until it is room temperature.
- Beat room temperature chocolate mixture into the egg mixture and set aside.
- Beat the 4 Egg Whites and 1 pinch Salt until soft peaks form.
- Sprinkle in the 1 tbsp Caster sugar and continue to beat until stiff peaks.
- Fold 1/4 of the whipped egg white mixture into the chocolate until it is combined, then fold in the rest.
- Put into a container for storage or serving, and chill for at least 3 hours or overnight.
