Turkey Meatballs
Ingredients Recipe
1 lb Ground dark turkey meat (thighs or legs)
1 Sweet onion
5 cloves Garlic
1/2 cup Basil
1/2 cup Parmesan
1/2 cup Panko breadcrumbs
2 larges Large eggs
2 tsps Salt
2 tsps Pepper
2 tbsps Olive oil
Steps
- Finely chop 1 Sweet onion and 5 cloves Garlic. Put 2 tbsps Olive oil into the bottom of a large, heavy bottomed pot big enough to hold all the meatballs and sauce. Add chopped onions and garlic, and season with salt & pepper. Cook on a medium heat until translucent and starting to brown. Remove from the pot and reserve on the side.
- Wash and chop 1/2 cup Basil finely. Reserve to the side.
- Break 2 larges Large eggs into a bowl and whisk to combine. Reserve to the side.
- In a large bowl, gently break up the 1 lb Ground dark turkey meat (thighs or legs) into small pieces with your hands. Add the 2 tsps Salt, 2 tsps Pepper, chopped 1/2 cup Basil, 1/2 cup Panko breadcrumbs, 1/2 cup Parmesan and cooked garlic & onion mixture. Mix gently with your hands until it's almost a homogenous mixture.
- Add whisked eggs to the meat mixture and finish mixing. Do not over mix but ensure it's completely combined. Let rest up 15-30 minutes.
- Using a small scale, weigh out 2 oz balls of the meat mixture and set aside briefly.
- Add meatballs to a cookie sheet covered in parchment paper
- Bake at 400°F for 15 minutes
- Remove & cut a meatball in half to ensure it's cooked all the way through and no pink remains
- Serve immediately plain or combined with sauce
