Italian Meringue

Ingredients Recipe
2 Large egg whites
160 grams Caster sugar
50 mls Water
1 pinch Cream of tartar
1 pinch Salt
1/2 tsp Vanilla extract
Steps
  1. In a pot bring 160 grams Caster sugar and 50 mls Water to boil on medium-high heat. Mix lightly only until combined. Use a thermometer to continue boiling until mixture reaches 245° Fahrenheit
  2. Whisk 2 Large egg whites in electric mixer on medium speed until foamy (approximately 1 minute)
  3. Add 1 pinch Cream of tartar and continue to mix briefly
  4. Add sugar syrup from pot into mixer slowly
  5. Continue to whisk until bowl is cool
  6. Add 1 pinch Salt and 1/2 tsp Vanilla extract
  7. Mix until combined (approximately 3 minutes)
