Everything Bagels

Ingredients Recipe
Dough
4 tsps active dry yeast
3 tbsps caster sugar
600 mls warm water
1 kg bread flour
1 tbsp salt
2 tsps garlic granules
Topping
1 tbsp maldon sea salt
1 tbsp flaked garlic
1 tbsp flaked onion
1 egg white
Steps
  1. Measure the 4 tsps active dry yeast and 3 tbsps caster sugar into the 600 mls warm water. Stir gently and allow to proof for about 10 minutes
  2. Add the 1 kg bread flour, 2 tsps garlic granules and 1 tbsp salt to a kitchen aid mixer, and mix briefly to combine.
  3. Add the proofed yeast mixture. Start the mixture off slow to combine, adding very small amounts of water or flour as needed to form a moist yet firm dough.
  4. Allow the dough work in the mixer for at least 5 minutes. Stop it once or twice and move the dough around to ensure even distribution.
  5. Remove the dough from the mixer and knead on a counter top for at least 5-10 minutes.
  6. Cover and let rest for 1 hour.
  7. After the dough has proofed for one hour, divide 24 even pieces (about 170g each for large New York City style bagels).
  8. Gently roll the dough into small balls, using the sides of your hands to tuck the dough under, keeping the top of the dough ball smooth and soft.
  9. Poke a hole through the center and stretch the hole to be an inch to an inch and a half in diameter. Repeat for all 24 pieces and let rest 10 minutes.
  10. Combine the 1 tbsp maldon sea salt, 1 tbsp flaked garlic and 1 tbsp flaked onion in a small dish and set aside.
  11. Whisk 1 egg white in a small dish until it is loose.
  12. Boil a large pot of water. Once boiling point has been reached, gently place the formed bagels into the water. Depending on the size of your pan, this may need to be done in several batches. Be careful not to overcrowd as they will increase in size by at least 2 fold. Boil on each side for 3 minutes.
  13. Just before the bagels come out of the boiling water, scatter some of the seasoning mixture on to the tray and place the bagels on top. Egg wash the top of each bagel with 1 egg white and sprinkle with more seasoning.
  14. Immediately place the bagels in a preheated 425 degree over for about 25 minutes. Once they are removed from the water, it's important to get them into the oven quickly. Cook until golden brown.
  15. Slice and serve immediately or Allow to cool and store in freezer bag in the freeze each wrapped in cling wrap.
