Vanilla Swiss Meringue Buttercream

Ingredients Recipe
4 Egg whites
300 grams Caster Sugar
400 grams Softened Unsalted Butter
1 tb Vanilla Bean
Steps
  1. In a large heat proof bowl add 4 Egg whites and 300 grams Caster Sugar being careful to not add egg yolk to mixture
  2. Stir to combine
  3. Set over pot of boiling water ensuring water does not touch bottom to form a bain marie
  4. Heat mixture mixing frequently until sugar has completely dissolved into egg whites
  5. Remove from heat & transfer into electric mixing bowl
  6. Whip on medium high speed until bowl is cool to touch
  7. Add 400 grams Softened Unsalted Butter 1 tb at a time while mixing at medium speed
  8. When all butter combined add 1 tb Vanilla Bean. Mix until incorporated
